Here is del Piero’s Olive Oil Cake family recipe.
Ingredients
  • 3 large eggs, beaten
  • 2 cups granulated sugar
  • 10 oz. QCOM Mexican Lime EVOO
  • 10 oz. milk
  • 2 oz. lime juice
  • 3 tsp. lime zest
  • 2 cups all purpose flour
  • 1/2 tsp. baking soda
  • 1/2 tsp. baking powder
  • 1 tsp. salt
Instructions
  1. Preheat oven to 350 degrees (325 if convection oven).
  2. Grease a 10 inch pan.
  3. Whisk the eggs, sugar, olive oil, milk, citrus juice, and zest.
  4. Sift the flour, baking soda, baking powder and salt.
  5. Mix the dry ingredients into the wet mixture.
  6. Whisk until blended.
  7. Pour into the prepared pan.
  8. Bake for 1 hour.
Serving size: 6
Notes

You may substitute any of the QCOM citrus extra virgin olive oils to make your favorite olive oil cake.
