
| Balsamic Sweet Potatoes |

Like no other sweet potatoes!
Ingredients
- 3 lbs. sweet potatoes
- 2 tbsp. fresh thyme chopped
- 1 1/2 tbsp. QCOM Tuscan Estate Extra Virgin Olive Oil
- 1/2 tsp. cinnamon
- 2 tbsp. fresh parsley, chopped
- 2 tbsp. QCOM Balsamic Vinegar
- salt and pepper to taste
Instructions
- Preheat oven to 425.
- Pierce potatoes in several places with fork.
- Place potatoes on baking sheet and bake for one hour or fork tender.
- Pull potatoes and when they are cool enough to handle peel.
- Then place potatoes in large mixing bowl and add balsamic vinegar, thyme, oil, and cinnamon.
- Mash until smooth.
- Taste season with salt and pepper.
- Top with parsley.
