The Estate: John Rea, Our Master Blender and Olive Oil Sommelier, is proud to introduce our 100% Estate-Grown Extra Virgin Olive Oil. Our 2024-2025 Estate EVOO was made from our two medium-density groves, composed of Arbosana and Koroneiki olives. We started this year’s harvest at the ideal time while the olives were mostly green with a good mix of purple.


The Process: We harvested 30.55 tons of olives mechanically from our groves using our Oxbo Harvest Machine on December 20 and 21, 2024 and January 13 and 14, 2025, and milled within two hours of harvest.


This year we made a total of 3,579 liters of EVOO. The olives were crushed using our Olivemax 33 mill with an average malaxation time of 32 minutes at an average temperature of 79 degrees Fahrenheit.


Sometimes called the "King of Olives," the Greek Koroneiki olive is renowned for its unusually high yield of oil (often up to a third of the olives' weight is oil) and its high polyphenol and antioxidant values. Arbosana trees are known for their resilience and ability to thrive in many climates and their oil is known for its fruity flavor and peppery finish. Our Estate EVOO is a beautiful expression of these varieties.


The Profile: Our Estate EVOO is carefully crafted to have a well-balanced flavor

revealing notes of tomato leaf and green almond, with a subtle undertone of fresh-cut grass, followed by a light, peppery finish. This exceptional oil is presented in a beautiful matte white bottle with a wooden closure.


Try it with our Bourbon Cask Balsamic Vinegar and serve over a green salad with olives, tomatoes, feta cheese, and sliced carrots.


Pair it with our Fig Balsamic Reduction or White Balsamic Vinegar for a sweeter dressing over baby spinach, walnuts, goat cheese, and strawberries.
